Almond Butter Yogurt Pops

Only 4 ingredients and 5 minutes of your time are needed to make this delicious snack/dessert! Using a nonfat Greek yogurt for extra protein, this is a great way to both satisfy your sweet tooth while regulating your blood sugar so that you don't experience a spike.


The ingredients in this recipe that is beneficial for your ovulatory phase are the almond butter and the pistachios, but Greek yogurt is wonderful as well due to its high protein content. During the ovulatory phase, estrogen and testosterone surge, so you want to eat foods that help your body balance out the spike in estrogen and support the heart.

Almonds contain high levels of omega-3s which are shown to reduce FSH levels, which is important to prevent menstrual problems including PCOS. They also have high levels of dietary fiber and contain magnesium.


Pistachios are rich in antioxidants, which is key to helping your liver metabolize excess estrogen. They also have trace minerals for lots of key micronutrients like magnesium, iron, zinc, calcium, and more.


 

Almond Butter Yogurt Pops

Serves: 4 Active Time: 5 minutes Total Time: 2+ hours

 

Ingredients

  • 1 cup nonfat Greek yogurt

  • 3 tbsp almond butter

  • 2 tbsp maple syrup

  • pistachios, to taste (Optional: I like using dark chocolate-covered pistachios)


Process

  1. Mix all ingredients in a small bowl until fully combined

  2. On a cookie sheet lined with parchment paper, make 4 evenly-sized yogurt pops. Add a popsicle stick through them

  3. Freeze for at least 2 hours, then enjoy!
