Baked Brie with Caramelized Onions and Mushrooms

I can’t Brie-lieve how delicious this is 🤪 just kidding, I fully expected this to taste great- what’s not to love about gooey Brie and caramelized onion and mushrooms wrapped in puff pastry 😍 Perfect for the holiday season! Or a random Monday evening 🤷🏻‍♀️



<Serves 8>


Ingredients

- Brie wheel

- 1 Puff Pastry Roll

- 1.5 medium white onions

- 3 Cremini mushrooms

- 1/4 cup granulated sugar

- 1/8 cup balsamic vinegar

- Flour (just so the puff pastry doesn't stick to the counter)

- 1 egg

- 1 tbsp water


Serve with

- Apples

- Crackers

- Celery

- Dates

- Walnuts/Pecans/Nuts




Process

  1. Preheat the oven to 400ºF

  2. Slice the white onion into thin strips. Sautee over medium-high heat for 5-7 minutes in a well oiled, medium sized pan.

  3. Slice the cremini mushrooms. Once the onions begin turning translucent, add the mushrooms to the pan. Add sugar and balsamic vinegar, and mix together. Let it sit another 5 minutes over medium heat, mixing occasionally.

  4. Take the roll of puff pastry and roll it out on a floured surface so that it's large enough to cover your brie wheel. Put the brie wheel in the middle, and fold the corners of the puff pastry around the cheese.

  5. Make the egg wash by whisking one egg with 1 tbsp water. Use an oil brush to paint the puff pastry with the egg wash.

  6. Cook for 30 minutes, or until the puff pastry becomes golden brown.

  7. Once removed from the oven, let it cool for 10 minutes. In the meantime, you can cut up apples, and set up some crackers to eat with your baked brie! Enjoy :)
