This recipe is perfect for the menstrual phase using beets, and flax. During your menstrual phase, you want to focus on warm, comforting cooking methods to warm up your uterus. From the nutrition side, you want to stock up on micronutrients that are the building blocks of blood. Your hormones are at their lowest levels and energy is low, so keep your blood sugar steady with low GI foods.

Beets are a great source of iron - which is essential to focus on when you bleed since your body is losing iron rapidly. It's also rich in beta-carotene and antioxidants, which promote the flow of blood to the uterus and reduces cramping.
Flax acts as an estrogen blocker, which prevents us from building up excess levels. They also are high in omega-3s which are shown to reduce FSH levels, are anti-inflammatory, and contain protein which balances blood sugar.
Beet Pasta
Serves: 2 Active Time: 10 minutes Total Time: 60 minutes
Ingredients
1 beet (around 1 cup chopped)
3-4 garlic cloves
1/2 cup cottage cheese
1/4 cup veggie or bone broth
2 tbsp lemon
1 tbsp olive oil
1 tbsp flax meal
Salt and pepper to taste

Process
Preheat oven to 400°
Wash, then dry your beet. Then fully cover it with aluminum foil and place it on a baking sheet and bake for 50 minutes.
After the beets have been baking for 20 minutes, add your garlic cloves (also fully wrapped in aluminum foil) to the baking tray and let them bake for the last 30 minutes.
With 10 minutes to go, start boiling water and prepare your pasta.
Remove the beets and garlic from the oven. Peel the beet, then roughly chop it.
Add the chopped beats, roasted garlic, and the rest of the ingredients into a high-speed blender. Blend until smooth.
Mix the pasta into the sauce, then top with parsley, walnuts, and feta!
