Black Forest Cloud Eggs

Remember the viral cloud egg trend? I've recently gotten re-obsessed with it, but decided to try a "sweet' version because the consistency is so light and fluffy - and boy am I glad that I did. These black forest cloud eggs are SO GOOD and satisfy the need for a pastry in the morning without actually spiking your blood sugar. It's low-calorie, high protein, and gluten-free.


I wouldn't really consider this a recipe for a specific phase of the menstrual cycle, but if I had to put it into one I would assign it to the menstrual phase. This is because it reduces inflammation and helps calm the body During the menstrual phase, you want to stock up on micronutrients that are the building blocks of blood. Your hormones are at their lowest levels and energy is low, so keep your blood sugar steady with low GI foods.




 

Black Forest Cloud Eggs

Serves: 1 Active Time: 5 minutes Total Time: 15 minutes

 

Ingredients

  • 2 egg whites

  • 1 tsp cocoa powder

  • 1/4 cup pitted cherries

  • dash of cinnamon

Top With:

  • honey

  • nonfat greek yogurt


Process

  1. Preheat oven to 450ºF

  2. Using a handheld mixer, whisk the egg whites on high speed until they become white and opaque. They should hold their form.

  3. Add in cocoa powder and fold it in, gently, so that the eggs do not lose air.

  4. Transfer the cocoa-egg mixture onto a buttered sheet pan, creating two large blobs. Use a spoon to make a divot in the center, so the two blobs look like nests.

  5. Bake for 12 minutes.

  6. In a small bowl, microwave the cherries with a dash of cinnamon for 30-45 seconds until they soften.

  7. Add Greek yogurt (or yogurt of choice) into the center of your nest. Top with the microwaved cherries, and some honey to sweeten!
