Breakfast Calzones

Breakfast calzones: yay or nay? Breakfast is my favorite meal of the day, so I’m constantly looking for new fun recipes. I am a firm believer that a great day starts off with a great breakfast- so starting your day off with this is a guaranteed amazing day


Ingredients for your follicular phase: eggs, avocado. During the follicular phase, your metabolism naturally slows down, so you want to eat foods that are lighter and aid liver detoxification to ensure estrogen buildup doesn't occur in the gut.



Eggs are a follicular phase food because they are high in choline, which is an important mineral for fertility. Eggs also have high levels of omega-3s which provide ovulation support and are a wonderful source of protein, and protein helps increase energy and promotes healthy egg production. This is also the reason that I love incorporating Greek yogurt into my recipes - it's high in protein and full of probiotics which aid gut health!


Avocado is a great source of healthy fats, with high levels of Omega-3s, which are shown to reduce FSH levels and are anti-inflammatory which helps curb inflammation. They are also associated with increased progesterone levels, promote ovulation, and optimize hormone levels. They are also very high in fiber, which helps our bodies flush out excess estrogen.

 

Breakfast Calzones

Serves: 6 Active Time: 20 minutes Total Time: 0 minutes

 

Ingredients

  • 1 bag of Trader Joe's Pizza Dough

  • 6 eggs (one for an egg wash)

  • 1/2 white onion, diced

  • 1/2 cup mushrooms, diced

  • 1 Roma tomato, diced

  • 1 tbsp salt

  • 1-2 cups shredded mozzarella (depends on your love for cheese)

  • 1 cup spinach

  • Splash of milk (3 tbsp ish)

  • 1 avocado

  • EBTB (around 1 tbsp)

  • Taco seasoning to serve

  • Sour cream to serve

Process

1. Take the pizza dough out and let it sit for 30 minutes.


2. In the meantime, dice your onion, mushrooms, and tomato. Take the avocado and mash it in a bowl, seasoned with EBTB.


3. Preheat the oven to 500ºF


4. Split the pizza dough into 6 even-sized pieces and roll them out into ovals (mine were nowhere near perfect, so just as circular as you can).


5. In a large, oiled pan over medium-high heat. Add your onions and let them sautee for around 5 minutes. Once translucent, add mushrooms and tomatoes. Cook for another 3 minutes. Then add in the spinach and salt. Crack in 5 eggs and add a splash of milk. Cook until they are no longer runny, but still wet. They will continue cooking in the oven.


6. Add the eggs and avocado smash across the middle of each calzone. Sprinkle cheese on top. Then fold the calzone over, roll the edges in, and then use a fork to secure the pocket. Check out our video since that might be easier to understand.


7. Take the calzones and put them on a baking sheet covered with parchment paper.


8. Make your egg wash by cracking an egg with 1 tbsp water. Brush the egg wash over the top of each calzone so that they will brown nicely in the oven.


9. Bake for 10 minutes, or until golden.

10. Serve with taco sauce and/or sour cream!
