Bruschetta Lentil Dip

Everybody seems to be talking about this dip recently so I gave it a shot (but made it from scratch) 🙌🏻 I’m gonna be making this again! Do y’all prefer the store-bought version of this or do you also make it yourself?


Ingredients

  • 1/2 trader joe's bag of lentils (1 cup)

  • 2 beefsteak tomatoes

  • 4 tbsp olive oil

  • 1 tbsp salt

  • 2 tbsp garlic powder

  • 1 tbsp ground pepper

  • 2 tbsp balsamic vinegar

  • 3/4 cup of crumbled feta cheese

  • Handful of basil

  • Organic elote corn chip dippers to serve

You can find pre-cooked lentils and premade bruschetta at TJs for an ultra-fast prep side dish!

Process

  1. Bring a medium saucepan half-filled with water to simmer. Add your lentils and cook until tender (15-20 mins).

  2. Chop your tomatoes and basil. Add do a large bowl with salt, pepper, garlic, olive oil, balsamic, and feta.

  3. Add the lentils to the bruschetta mixture and serve!
