Everybody seems to be talking about this dip recently so I gave it a shot (but made it from scratch) 🙌🏻 I’m gonna be making this again! Do y’all prefer the store-bought version of this or do you also make it yourself?
Ingredients
1/2 trader joe's bag of lentils (1 cup)
2 beefsteak tomatoes
4 tbsp olive oil
1 tbsp salt
2 tbsp garlic powder
1 tbsp ground pepper
2 tbsp balsamic vinegar
3/4 cup of crumbled feta cheese
Handful of basil
Organic elote corn chip dippers to serve
You can find pre-cooked lentils and premade bruschetta at TJs for an ultra-fast prep side dish!
Process
Bring a medium saucepan half-filled with water to simmer. Add your lentils and cook until tender (15-20 mins).
Chop your tomatoes and basil. Add do a large bowl with salt, pepper, garlic, olive oil, balsamic, and feta.
Add the lentils to the bruschetta mixture and serve!
