Chicken Fajitas with Enchilada Sauce

What else do you use the enchilada sauce for? I have extra and don’t know how to use it 😋

Ingredients

• 1 white onion

• 1 yellow (or other color) bell pepper

• 1 tbsp paprika

• 1 tsp cumin

• 1 tsp garlic salt

• 1 tsp chili powder

• 1 tbsp salt

• 1 tsp pepper

• 1 tbsp olive oil

• Trader Joe's Enchilada Sauce

• Guacamole

• Sour Cream

• Mozzarella

• Salsa

Process

1. Cut onions, peppers, and chicken as shown.

2. Toss chicken in cumin, paprika, garlic salt, chili powder, salt, and pepper.

3. Bake everything at 350 for 35-ish minutes or until the chicken is fully cooked.

4. Toss everything in the enchilada sauce.

5. Melt cheese on the tortilla. And serve with whatever toppings you like - salsa, sour cream, guacamole etc :)
