Serves 4
Ingredients
Pita
2 cups flour
1 and 1/2 tsp yeast
1/2 tsp salt
3/4 cup warm water
2 tbsp olive oil
Chicken Shawarma
2 large chicken breasts
2 tbsp olive oil
1/2 lemon
1 tbsp honey
Lots of shawarma seasoning
Beet Hummus
1 can of chickpeas
1/2 lemon
1 tsp Cumin
1 tsp salt
1 beet
2 tbsp tahini
1 tbsp olive oil
Tomato Cucumber Salsa
1 red onion
1 cucumber
1 large tomato
1 tbsp olive oil
1 tsp salt
1 tsp pepper
Other
1 cup spinach (chopped)
Tahini
Process
Prepare your dough (we used a bread machine). Start with water, then add oil, flour, salt, and yeast. In that order. Set to the correct setting (depends on machine).
Prepare chicken. Cut your chicken into bite sized strips (fajita style). Add oil, lemon, honey, and seasoning. Mix and let marinated for 1 hour.
Heat a medium sized pan up to cook the chicken. Add the chicken and cook for 15-20 mins or until the chicken is full cooked.
Head a large pan or skillet up to cook the pita.
Divide the dough into baseball sized blobs. Roll out to your desired size.
Make sure the pan is very hot, and then cook pita for 1 minute on each side (flip when evenly bubbling).
Hummus! Add chickpeas, salt, cumin, lemon, tahini, the beet, and olive oil to a blender. Blend!
Salsa! Chop the tomato, cucumber, and onion. Add olive oil, salt, and pepper. Mix!
Assemble: Start with the pita, then spread the hummus, then add chopped spinach, salsa, chicken, and top with a bit more tahini!
