Chocolate PB Cup Cupcakes (with Cream-Cheese Frosting)

Cupcakes inspired by Trader Joe’s peanut butter cups! It has a peanut butter cream cheese frosting and a PB cup inside! It has no eggs, but it does have mayonnaise- which made all the difference with the moisture with these babies.

Cook/bake time: 15 minutes


Total Time: 35 minutes


Ingredients

  • 2 cups flour

  • 2 cups sugar

  • 4 tbsp cocoa powder, unsweetened

  • pinch of salt

  • 2 tsp baking soda

  • 1 cup cold water

  • 1 cup mayonnaise

  • 1 tsp vanilla

  • Dark Chocolate Peanut Butter Cups

Cream Cheese Frosting:

  • 8 oz cream cheese

  • 1/3 cup peanut butter

  • 3 cups powdered sugar

Process

  1. Preheat oven to 350º

  2. Sift dry ingredients (flour, cocoa powder, salt, baking soda, sugar) into a large mixing bowl. Add mayonnaise, vanilla, and water. Mix together until combined.

  3. Pour batter into an oiled cupcake tin.

  4. Cut peanut butter cups in half and add them to each tin.

  5. Bake for around 15 minutes, or until you can stick a toothpick in without batter sticking to it.

  6. While it's baking, create your frosting. Combine powdered sugar, peanut butter, and cream cheese in a bowl and mix until smooth. Put the frosting in a large plastic bag and cut a corner to frost the cupcakes.
