Citrus Salad

The follicular phase is the body's spring, and nothing says spring like this citrus salad! This salad tastes as good as it looks. It's packed with flavor and nutrients and is so light and refreshing - making it the perfect spring or summer salad. And because it's so colorful, it's a gorgeous dish to serve when guests are over. You can play around with the citrus you use - I like adding grapefruit or pomelos as well, but that's personal preference!


Ingredients for your follicular phase: orange, lettuce, vinegar, parsley. During the follicular phase, your metabolism naturally slows down, so you want to eat foods that aid liver detoxification to ensure estrogen buildup doesn't occur in the gut.

Oranges, and citrus more generally, are high in vitamin C and antioxidants which reduce inflammation in the body. But most importantly, they are effective at liver detoxification, and vitamin C helps with iron absorption. 


Parsley contains high levels of vitamin K which is great for bone health and is also rich in vitamin C and antioxidants which alleviate inflammation in the body.


Lettuce is good for follicular because it is high in fiber content, which helps your body detox and eliminate excess estrogen.


Vinegar is another follicular phase food and is especially great for women with PCOS. Vinegar balances insulin production which can reduce androgen production.


 

Citrus Salad

Serves: 2 Active Time: 10 minutes Total Time: 10 min

 

Ingredients

  • 4 cups lettuce, chopped

  • 1 orange

  • 2 Tbsp pomegranate seeds

  • Fresh mint, chopped

  • ¼ cup parsley, chopped

  • 1 Tbsp olive oil

  • 1 Tbsp balsamic vinegar


Process

  1. Use a knife to remove the peel and the pith from the orange. Then slice the orange into 1/4 inch rounds.

  2. Assemble the salad by combining all the ingredients
