Coconut Macaroons Dipped in Dark Chocolate

Do you love coconut and dark chocolate? Me too. These were delicious :)


Ingredients

  • 4 cups shredded coconut (unsweetened)

  • 1 tbsp of sugar

  • 2 tsp salt

  • 2 eggs

  • 1 cup sugar

  • 1/2 lemon

  • Lots of dark chocolate

Process

  1. Preheat your oven to 325F

  2. Mix 2 cups coconut, 1 tbsp sugar, 1 tsp salt

  3. Toast for 5 mins

  4. Mix the toasted coconut with the rest of the coconut

  5. Crack 2 eggs and whisk until fluffy

  6. Slowly mix the 1 cup sugar, 1 tsp salt, and 1/2 lemon into the egg mixture

  7. Fold the coconut into the egg mixture

  8. Refrigerate for an hour

  9. Form into balls of your desired size

  10. Bake for 25-ish minutes or until light brown

  11. Melt dark chocolate

  12. Drizzle with dark chocolate

  13. Enjoy!
