Cucumbers are a great way to hydrate yourself through food, which is especially important during the luteal phase when you might experience bloating or puffiness. They are also high in Vitamin A which aids in the process of gut detoxification, allowing our body to more easily excrete excess estrogen which can help prevent acne.

Creamy Cucumber Salad

Serves: 2 Active Time: 10 minutes Total Time: 10 min

 

Ingredients

  • 1 English cucumber, chopped

  • 1 apple, chopped

  • 1/4 shallot, diced

  • Dill

Creamy Lemon Dressing

  • 2 tbsp lemon juice

  • 2 tbsp Greek yogurt

  • 1 clove garlic, minced

  • 1 tsp olive oil

  • pinch of salt

  • 2 tsp maple syrup

Process

  1. Cut your cucumber, apple, and shallot and add it into a mixing bowl.

  2. Make your creamy lemon dressing by combining all the ingredients in a small cup or jar. Mix together then pour on top of your salad.

  3. Top with fresh dill
