Cheesy potatoes are amazing as is- but adding Gorgonzola is a game-changer. This recipe is inspired by the Gorgonzola crackers that Trader Joe's stopped carrying. I miss them dearly. But until I am reunited with my favorite crackers, this recipe will satisfy my Gorgonzola cravings. Enjoy!

Ingredients
2 tbsp olive oil
1/2 cup white onion, chopped
1 tbsp minced garlic
21/2 tbsp flour
2 1/2 cup whole milk
1/4 cup mozzarella (we used mozzarella string cheese)
3/4 cup gorgonzola
1/4 cup pecorino
2 tsp salt
1/4 tsp ground black pepper
3 lbs potatoes, peeled and sliced
Process
Preheat oven to 375º
Use a food processor to thinly slice, or scallop, your potatoes.
In a large pan over medium-high heat, heat up your olive oil. Add diced white onion and saute for 5 minutes. Add in minced garlic, milk, salt, pepper, gorgonzola, mozzarella, and pecorino. Stir over medium heat until uniform.
Layer the potatoes inside an oiled 13 x 9 pan. Pour the cheesy mixture on top of the potatoes and use a spatula to mix it in. Grate some more pecorino on top to taste.
Bake for 30-40 minutes, or until browned.
Let it cool for 10 minutes before serving. Enjoy!
