Healthy Maple Marshmallows

Okay, so I have been seeing these healthy marshmallows all over social media, and I HAD TO TRY IT! So I found a healthy, grass-fed beef gelatin powder - and discovered that 1 tbsp of gelatin packs 9g of protein which is pretty insane AND it has collagen. So really, I would argue that this is a health food.


And it's actually fairly easy to make - you just need 10 minutes and then you let it sit in the fridge for 4 hours until it's ready to eat. I have been adding it to my nightly cocoa or morning mochas for extra protein. Is it actually good for you? Not sure. But it brings me lots of joy so I'm excited to share this recipe with you all!


 

Serves: 9 Active Time: 10 minutes Total Time: 4 hours

 

Ingredients

  • 3 tbsp gelatin

  • 1 cup water, divided

  • 1/3 cup maple syrup

  • 1 tsp vanilla


Process

Add the gelatin and 1/2 cup water into a large mixing bowl. Let it sit for 2-3 minutes so that the gelatin goops.


Add the other 1/2 cup water to a small pot over low heat and add the maple syrup and vanilla. Let it heat up for 2-3 minutes while the gelatin soaks in the water.


Prepare a large baking dish for the marshmallow fluff by lining it with parchment paper. Set aside. (Note - it does not need to be a baking dish, it won't go in the oven, but you want something deep and large enough to contain the marshmallow.


Slowly pour the maple and water mixture into the mixing bowl, using a handheld electric whisk on low speed.


Once fully added, switch the speed to high speed and whisk for 6-8 more minutes until the foam is no longer translucent and peaks when the whisk is lifted.


Quickly pour the mixture onto the parchment paper, then put it in the fridge for at least 4 hours. Then cut up and it's ready to enjoy!
