Hummus Crusted Chicken with Carrot Fries

My favorite healthy alternative for fried chicken šŸ™ŒšŸ» Hummus crust!

Ingredients

For the chicke

  • 4 chicken breasts

  • Trader Joe's Hummus Dip

  • Salt and pepper to taste

  • 1/2 lemon

For the carrot fries

  • 4 carrots

  • Paprika to taste

  • Garlic salt to taste

  • Salt to taste

For both

  • Trader Joe's Green Goddess Salad Dressing

Process

For the chicken

  1. Preheat oven to 450F

  2. Pat the chicken to dry. Spread a layer of hummus on top of the chicken (this will be the crust so add as much as you like!)

  3. Add salt, pepper, and squeeze some lemon on top.

  4. Bake for 25-30 minutes or until golden brown. I put it on broil for 3 extra minutes to make it crispier.

For the carrot fries

  1. Cut carrots into fry-sized pieces

  2. Place in a bowl. Season with paprika, garlic salt, and salt. Feel free to add anything else here!

  3. Put in the air fryer at 350F for 15-20 minutes.

  4. Serve with TJ's Green Goddess Salad Dressing as a dip!!! So gooood
