Jicama Wrap Chilaquiles

I’m pretty proud of this new way to use jicama wraps 🤪 Ngl it doesn’t add quite the same crunch to my chilaquiles, but can’t complain cuz it tastes great and is way healthier!


Also topped it with EBTB, avocados, and Boursin 😋 Now there’s no going back.


Ingredients

  • 4-6 Trader Joe's jimaca wraps

  • 1/2 white onion (diced)

  • 3 eggs

  • 3 tbsp soyrizo (or as much as your heart desires)

  • 1/2 cup spinach

  • 1/4 cup salsa

  • 1 sprinkle of goat cheese

  • 1/2 avocado

  • Lots of EBTB


Process

  1. Cut the jimaca wraps into 8 triangles (like a pizza)

  2. Add diced onion and the cut jicama wraps onto a medium-heat skillet

  3. Cook until the jimaca wraps are crispy (they will not be as crispy as tortillas but that's ok)

  4. Add your eggs, and soyrizo

  5. Near the end of the cooking process, add spinach and salsa

  6. Mix well

  7. Top with goat cheese, avocado, and EBTB

  8. Enjoy!
