Lemon Ricotta Waffles

Honestly, the lemon ricotta could be eaten on its own because it’s so fluffy and delicious as is 😋 but adding it to waffles was a game changer for the waffles!!! It made them SO fluffy, and the lemony flavor was gentle but definitely a good addition 😍 If you need ideas for Christmas breakfast this year- these waffles are guaranteed to be a hit with your family!

Ingredients

- 1 1/2 cup flour

- 3 1/2 tbsp sugar

- 2 tsp baking powder

- 1/4 tsp baking soda

- 1/2 tsp salt

- 1 cup milk

- 3 eggs

- 3/4 cup lemon ricotta

- 1 tsp vanilla

- 1 tbsp lemon zest

- 1/4 cup lemon juice

- 1 tbsp melted butter


Toppings

- Maple syrup

- Blueberries

- Powdered sugar


Process

  1. Mix together dry ingredients in a large mixing bowl- flour, sugar, baking powder, baking soda, and salt.

  2. Crack the eggs into a medium-sized mixing bowl and whisk together. Add milk, lemon ricotta, vanilla, lemon zest, lemon juice, and melted butter. Whisk together until smooth.

  3. Combine dry and wet ingredients and mix together until the batter is made and smooth.

  4. Scoop the batter into your waffle maker-- or if you don't have a waffle maker you can just make pancakes! When ready, top with maple syrup, powdered sugar, and blueberries.
