All my favorite things about breakfast are encased in a flour tortilla. What's not to love? But this single quesadilla was so filling, that I decided it should count as two servings 😜

Ingredients
1 flour tortilla
2 frozen hashbrowns
2 Tbsp soyrizo
½ cup shredded Mexican cheese
3 eggs
Process
Heat up the two frozen hashbrowns. I did it in the toaster, on 3.
On an oiled pan, over medium-low heat, make 3 eggs, scrambled and over easy. Add in the soyrizo.
In a separate large pan, heat up your flour tortilla. Add cheese to half of it. Measure with your heart.
Once the cheese is melted, add the egg and soyrizo scramble on top of the cheese. Then cover with more cheese and enclose it with the other half of the tortilla.
Serve hot
