While we’re on the theme of Morockin’ dishes, here’s an egg(plant)xcellent vegan side dish to go with it 😉 It’s amazing you should all try this one!
Ingredients
1 eggplant
2 tbsp olive oil
Chermoula Sauce
1 tsp cumin
1 tbsp garlic
1 tsp paprika
1/2 tsp salt
1/2 lemon juice and zest
3 tbsp cilantro
3 tbsp olive oil
Process
Preheat oven to 400 F
Slice and quarter your eggplant
Toss with 2 tbsp olive oil
Bake for 40 mins
While the eggplant is cooling, make your chemoula sauce
Chop the garlic and cilantro
Add cumin, garlic, salt, paprika, lemon, cilantro, and olive oil to a bowl and mix
Toss the roasted eggplant in the chemoula sauce
Enjoy!
