Roasted Garlic Gnocchi with Korean Short Ribs


A delicious Trader Joe's dinner! We used the Korean marinated beef short ribs from the frozen aisle, and added it to a garlic butter gnocchi, topped with Parmesan!


Of course, you can also make your own marinade (check out our bulgogi tacos for a great marinade!). But sometimes you just want a quick and easy dinner - and buying a pre marinaded item is the move.


But the secret ingredient for the flavor in this dish is the roasted garlic. It is so good and really takes the dish to the next level. It does take some time, but it's very hands-off.

Total Time: 75 minutes

Ingredients

  • 1 head of garlic

  • 1 Tbsp olive oil

  • salt to taste

  • 20 oz Korean-style beef short ribs (we got them from Trader Joe's)

  • 14 oz gnocchi

  • 1 Tbsp butter

  • 1 tsp black pepper

  • ⅛ cup Parmesan

  • 1 Tbsp thyme, chopped

  • lemon juice to garnish


Process

  1. Remove the excess skin from a head of garlic. Wrap in aluminum foil, drizzle with olive oil, and bake at 400 for 30-40 minutes.

  2. Bring a pot of water to a boil. Once boiling, add your gnocchi and remove it once the gnocchi starts to float (2-3 minutes).

  3. Heat up your grill or grill pan. Once hot, grill your short ribs for 2-3 minutes on each side. Remove and let rest for a few minutes. Next cut the meat into pea-sized pieces

  4. Bring a separate large skillet to medium heat. Add 1 tbsp of olive oil and your gnocchi. Add your black pepper and sauté the gnocchi until it’s slightly crispy (5 minutes). Turn the heat down to low.

  5. Once the gnocchi is slightly crispy, add a few knobs of butter, your roasted garlic, the short rib meat. Mix together and turn off the heat.

  6. Garnish with a bit of lemon juice, chopped thyme, and grated parmesan.

  7. Enjoy!
