Roasted Pear and Brussels Salad

Ingredients
3 cup Brussels, shredded
1 tsp olive oil
1 pear, thinly sliced
1 tsp garlic powder
2 Tbsp feta
2 Tbsp pomegranate seeds
¼ cup Candied walnuts
Honey Mustard
2 tsp lemon juice
1 tsp ACV
1 Tbsp Dijon mustard
1 tsp maple syrup

Preheat the oven to 375
In a food processor, add your washed Brussels sprouts and chop until shredded. Pour onto a sheet pan, and lightly drizzle olive oil and 1 tsp garlic powder on top, massaging it in
Add sliced pears onto the pan and then bake for 18-20 minutes
Meanwhile, make the honey mustard dressing by combining all ingredients in a jar and mixing thoroughly
Assemble the salad by adding the roasted Brussels and pears into a small bowl, along with feta, pomegranate seeds, and candied walnuts. Drizzle dressing on top and enjoy
Tip: if you need to serve more people, feel free to add some kale for volume! Then just increase the dressing
