Shake up your breakfast with some shakshuka! We also love the truffle cheese! It pairs very nicely with the eggplant :)
Ingredients
1 white onion
1 eggplant
2 roma tomatoes
1 tbsp paprika
1/2 tbsp chili flakes
1 tsp cumin
1 egg per person (or more, I am not your mother)
Truffle cheese
A handful of parsley
1 tbsp lemon
Process
Heat up a large pan
Chop and saute onions
Chop and mix in the eggplant
Let cook down for 10 mins - or until the eggplant is soft
Chop and mix in tomatoes
Let simmer down for 5 - 10 mins
Add paprika, cumin, and chili flakes
Make divots for the eggs in the veggie mixture
Crack eggs into divots
Top with cheese and parsley
Serve with toast :)
