Sheet Pan Egg & Sausage Breakfast

This sheet pan egg & sausage breakfast is one of the easiest ways to get a nutrient-filled breakfast on your plate in a low-effort way. Use the breakfast sausage of choice for you, I did turkey for the luteal phase because it's a great lean protein - but that can be hard to find so chicken or any other works too.


Ingredients for your luteal phase: sweet potato, turkey. During the luteal phase, you want to focus on fiber-rich foods to support the large intestine in flushing out excess estrogen and consume nutrient-dense food as your body's metabolism naturally speeds up.

Sweet potatoes are a slow-burning carbohydrate, which is a great addition to your diet in the luteal phase when your metabolism naturally speeds up so you may find yourself getting hungrier faster. They are also packed with vitamin B which helps boost your mood and energy levels, which many women find themselves lacking as they get closer to their menstrual phase. And if you've watched the Blue Zone documentary on Netflix - you know that the purple variety has the highest levels of antioxidants!


Turkey is rich in vitamin Bs (which are important for the production of progesterone), magnesium (which can help reduce anxiety), iron (which is important for healthy blood cells), zinc (which helps set the foundation for our body to create progesterone), and choline (an important mineral for fertility).

 

Sheet Pan Egg & Sausage Bake

Serves: 2 Active Time: 5 minutes Total Time: 50 minutes

 

Ingredients

  • 1 tsp olive oil

  • 1 sweet potato, cubed (I used 1/2 purple and 1/2 orange)

  • 1 cup cherry tomatoes (on the vine is prettier)

  • 4 turkey breakfast sausages

  • 4 eggs

  • 1 handful of spinach

  • 1/4 cup Greek yogurt

  • 1/4 cup guacamole

Process

  1. Preheat the oven to 400°F

  2. Add the sweet potato, cherry tomatoes, and breakfast sausages to the pan. Drizzle olive oil to the sweet potato and tomatoes and mix it in. Salt and pepper to taste, then bake for 25 minutes

  3. After 25 minutes, remove the veggies from the oven. Crack 4 eggs onto the pan and add some spinach over the veggies.

  4. Return to the oven and bake for 7-10 more minutes

  5. While the eggs are cooking, make an avocado crema. Mix guacamole with Greek yogurt to make a crema.

  6. Serve sausage, eggs, and veggies with an avocado crema on top.
