Smashed Potatoes

So originally, I thought smashed potatoes just looked cute but turns out there’s a reason behind the smash 🤪 These bad boys turned out so crispy, it was a SMASHING success! Would definitely recommend making these for Christmas, or really any other dinner!



Serves 4

Prep Time: 10 minutes

Cook Time: 40 minutes


Ingredients

  • 1 bag baby potatoes (the smaller the better) around 2 lbs

  • 2 tbsp olive oil

  • 1 tbsp rosemary

  • 2 cloves garlic

  • dash of salt

Process

  1. Bring water to a boil in a medium-sized pot. Wash the baby potatoes, then toss them into the pot to boil for 10-15 minutes, or until soft.

  2. Pour the potatoes into a strainer and let them sit for 5 minutes. While you wait, preheat the oven to 400º

  3. On an oiled baking tray, place the potatoes with a bit of space between each one. Use a fork, or a potato masher, to flatten the potato. Rotate the fork 90º and flatten again.

  4. Combine olive oil, rosemary, garlic, and salt in a small bowl. Use an oil brush to brush the mixture over your smashed potatoes.

  5. Bake for 20-25 minutes. Enjoy!
