Southern Jambalaya

Tried coming up with a pun but my thoughts were too jumbled(laya?) 🄁 please let me know if you have a better pun šŸ˜‚


Ingredients

  • 2 tbsp olive oil

  • 1 large chicken breast

  • 2 cans TJ's green chilies

  • 1 can diced and fired tomatoes1 stalk celery

  • 1 sweet onion

  • 1 red bell pepper

  • 3 roma tomatoes

  • 1 tbsp cumin, garlic powder, paprika

  • 1 tsp cayenne, yellow mustard powder

  • 3 bay leaves

  • 1 pack TJ’s Andouille sausage

  • 1/2 pack TJ’s medium frozen shrimp

  • 1 bag of chimichurri rice

Process

  1. Dice the onion, red bell pepper, celery, tomatoes, and chicken.

  2. Bring a cast iron to low heat. Add the onion, bell pepper, celery, chicken, green chilies, can of tomatoes, and spices. Simmer on low for 1.5-3 hours.

  3. Slice and add the sausage 30 min before serving.

  4. Add the frozen shrimp 5-10 mins before serving.

  5. Microwave the rice.

  6. Ladle the jambalaya over the rice and enjoy!
