I know, pineapple on pizza is a heated debate 😅 but if it’s on breakfast pizza... that’s okay, right??? (Spoiler alert: it’s amazing)

Ingredients
Dough - you can use TJ premade dough or make your own!
1/3rd of Trader Joe's Soy Chorizo package (12 oz -- we used around 4 oz)
6 eggs
1 white onion
Shredded mozzarella (as much as you'd like- I did around 1/2 cup)
1 diced tomato
Arugula (as much as you'd like)
Pineapple (optional- I don't mean to offend anyone but I think pineapple belongs on pizza!!!!)
Boursin (as much as you'd like, I just sprinkled some on top)
1 avocado
Process
Preheat oven to 400ºF
In a large skillet over medium heat, add the chopped white onion and soyrizo and let cook for 5 minutes. Add in the 6 eggs and scramble. Do NOT cook all the way through!!! It'll finish in the oven on the pizza.
Flour a clean surface. Add the dough and roll it out into a circular shape for the pizza. Roll the edges to make a crust.
Add the scramble into the middle of the pizza and spread evenly. Top with shredded mozzarella, diced tomato, arugula, diced pineapple, and Boursin.
Bake for 20 minutes at 400ºF or until the crust turns golden.
Add slices of avocado on top to serve!
