Sushi Lox

Sushi, can I introduce you to a Jewish deli? Two great cuisines combined, we get - the sushi lox. This cucumber roll is the perfect breakfast option to stay hydrated and get your protein in for the day. Plus it's quick and easy to do, and a great way to mix it up so you don't get bored of eating the same thing over and over.


The ingredients in this recipe that are beneficial for your ovulatory phase are salmon. During the ovulatory phase, estrogen and testosterone surge, so you want to eat foods that help your body balance out the spike in estrogen and support the heart.

Salmon is great for the ovulatory phase because it is high in omega-3s, which our body cannot produce on our own so it’s important to add it into our diets. Omega-3 will boost your mood, bust stress, is anti-inflamatory, and aids in progesterone production. It is also high in vitamin D which can increase FSH sensitivity and increase progesterone production, which is important if you’re trying to conceive!


 

Sushi Lox

Serves: 1 Active Time: 5 minutes Total Time: 5 min

 

Ingredients

  • 1/2 English cucumber or 2-3 Persian cucumbers

  • 1 tbsp cream cheese

  • 2 oz smoked salmon

  • squeeze of lemon

  • Everything but the bagel seasoning

  • dill


Process

  1. Use a peeler to make thin slices of cucumber. Lay them flat on a cutting board, overlapping half of the new slice on top of half of the old slice. This way, when you roll them up, they will stay together.

  2. Use a paper towel to firmly press on the cucumber to soak up excess liquid.

  3. Spread cream cheese in a horizontal line, on top of the cucumber. Then add smoked salmon, a squeeze of lemon, dill, and EBTB seasoning.

  4. Carefully roll up the cucumber slices with everything inside, so that it turns into one long log.

  5. Slice it into 2 inch thick pieces using a sharp knife. Enjoy!
