Taco Stuffed Potato

Why am I not eating all my meals out of a potato? Seriously this was amazing!!!

Ingredients

  • 3 large potatoes

  • 1 pack of ground turkey

  • 4 tbsp oil

  • 2 tbsp salt

  • 1 tbsp ground black pepper

  • 2 tbsp garlic powder

  • 1 red bell pepper

  • 1 roma tomato

  • 1 white onion

  • 1/2 jalapeno (optional)

  • 2 tbsp salt

  • 2 tbsp paprika

  • 2 tbsp TJ's umami seasoning

  • 1 tbsp oregano

  • Avocado to serve

  • Choose your favorite cheese to serve

  • TJ's enchilada sauce to serve




Process

  1. Preheat the oven to 400ºF.

  2. Wash the potatoes but don't skin them. In a small bowl, rub the potatoes with oil, salt, pepper, and garlic powder. Put the potatoes on a baking sheet and cook for 50 minutes to 1 hour.

  3. Dice the bell pepper, white onion, tomato, and jalapeno.

  4. 30 minutes after putting the potatoes in the oven, heat oil on a large skillet over medium high heat. Add in the diced vegetables and mix for 5 minutes. Then, add in the ground turkey and mix. It should be cooked after around 6-8 minutes. Add in the seasonings (salt, paprika, umami seasoning, oregano).

  5. Take the potatoes out of the oven. Cut the top off the potatoes and scoop out most of the inside. Add in the ground turkey taco mix.

  6. Grate some cheese and sprinkle on top of the potato taco. We put it back in the oven for another 5 minutes to melt the cheese. Then add avocado slices and enchilada sauce to serve.
