Tex Mex Quinoa Bowl

I love a 30-minute dinner that's easy to whip up, healthy, and delicious. And this is no exception.


Ingredients for your luteal phase: turkey, onion, garlic During the luteal phase, you want to focus on fiber-rich foods to support the large intestine in flushing out excess estrogen and consume nutrient-dense food as your body's metabolism naturally speeds up.



Onions are one of the easiest ingredients to add to a luteal phase recipe! They are high in antioxidants, help regulate blood sugar levels, and are a great source of manganese and potassium.


Turkey is rich in vitamin Bs (which are important for the production of progesterone), magnesium (which can help reduce anxiety), iron (which is important for healthy blood cells), zinc (which helps set the foundation for our body to create progesterone), and choline (an important mineral for fertility).


Garlic is filled with anti-inflammatory properties, and studies show that the consumption of garlic helps significantly reduce premenstrual symptoms with a confidence interval of 95%!


 

Tex Mex Quinoa Bowl

Serves: 1 Active Time: 10 minutes Total Time: 25 minutes

 

Ingredients

  • ¼ cup quinoa

  • 4 oz ground turkey

  • ½ cup white onion, diced

  • ½ cup red bell pepper, diced

  • 1 cup kale

  • ¼ cup black beans

  • ¼ cup pico de gallo

  • Chipotle Mayo sauce

  • lime

  • cilantro

  • Cheddar or Mexican cheese

  • 1/4 avocado

  • jalapeños

Process

1. Start by boiling 1/2 cup water in a small pot for your quinoa, and prepare according to the instructions


2. While that's cooking, heat a large pan over medium-high heat. Add a bit of oil, then sautee your onions for 3-4 minutes, or until translucent. Add your bell pepper and cook for another 3 minutes.


3. Add the ground turkey to the pan and cook for another 6 minutes or until fully browned. Then add your seasoning to the pan and cook for another 1-2 minutes


4. Prepare your bowl. I start by putting my kale at the bottom of the bowl, and then pouring the quinoa on top of it. That way it softens the kale with the heat. Add the turkey mixture on top of that, then serve with cheese, chipotle mayo sauce, salsa (I used a black bean salsa), limes, cilantro, and jalapeno
