This recipe is so easy that it doesn't even really have to be a recipe! But I did want to post it for inspiration so that anybody trying to think about what to eat during the menstrual phase will know that this is a delicious and refreshing option!
This recipe is perfect for the menstrual phase, containing watermelon and kale. During your menstrual phase, you want to focus on warm, comforting cooking methods to warm up your uterus. From the nutrition side, you want to stock up on micronutrients that are the building blocks of blood. Your hormones are at their lowest levels and energy is low, so keep your blood sugar steady with low GI foods.
Watermelon has a high water content, which is great for keeping you hydrated and reducing bloating during your period, and preventing constipation. It is also loaded with vitamin B6, which aids serotonin production - meaning you'll be feeling happier and less anxious while you bleed.
Kale is high in vitamin E which helps flush out estrogen and is an antioxidant that calms inflammation. Vitamin E also contributes to healthy progesterone levels, which is important at this time of your cycle.
Watermelon, Cucumber, and Feta Salad
Serves: 2 Active Time: 5 minutes Total Time: 5 minutes
Ingredients
1 cup watermelon, chopped
1 cup cucumber, chopped
1/4 cup red onion, diced
3 handfuls kale
1/2 cup mint, chopped
2 tbsp feta
2 tsp olive oil
2 tsp balsamic vinegar
Process
Chop your veggies and throw them into your serving bowl (or your individual bowls). Add balsamic vinegar and olive oil. And anything else you're craving!
